Activate and mix
In a small bowl combine warm water, sugar and instant yeast. Stir and let sit 3–5 minutes until slightly foamy. In a mixing bowl combine flour and salt. Add foamy yeast mixture and 1/2 tablespoon olive oil. Stir with a spoon until a shaggy dough forms.
Knead and rest
Turn dough onto a lightly floured surface and knead 2–3 minutes until smooth and slightly elastic. Form into a ball and place in a lightly oiled bowl, turning to coat. Cover with plastic wrap or a towel and let rest 20–30 minutes at room temperature until puffy (dough will be small—enough for one 6–8 inch pizza).
Preheat and shape
Preheat oven to 475°F (245°C). If using a pizza stone or baking sheet, place it in the oven to heat. On a surface dusted with cornmeal or flour, gently press the dough ball with your fingertips to deflate slightly, then stretch and press into a 6–8 inch round about 1/4 inch thick at center, slightly thicker at edge to form a rim. Transfer to a piece of parchment or a lightly dusted peel/baking sheet.
Sauce
In a small bowl combine tomato sauce, minced garlic, dried oregano, salt, black pepper and optional sugar. Stir until blended. Taste and adjust seasoning. Spread about 3 tablespoons of the sauce evenly over the shaped dough, leaving the rim free.
Toppings
Sprinkle shredded mozzarella evenly over the sauce. Arrange pepperoni slices on top. Add a light dusting of grated Parmesan if using, and sprinkle red pepper flakes to taste. Keep toppings modest to ensure even cooking on a personal-size pizza.
Finish & Bake
Brush the exposed dough rim lightly with 1/2 teaspoon olive oil. Slide the pizza (on parchment or peel) onto the preheated stone or baking sheet. Bake in the preheated oven for 8–12 minutes until crust is golden and cheese is bubbling and lightly browned. Oven times vary — start checking at 7–8 minutes.
Remove pizza from oven using a peel or tongs and place on a cutting board. Let rest 2 minutes, then scatter fresh basil leaves on top if using and finish with a small sprinkle of extra-virgin olive oil or grated Parmesan.
Slice and serve immediately.
