Garlic-Parsley Butter
Soften butter
Leave the unsalted butter at room temperature for 20–30 minutes until soft but not melted. If short on time, microwave at 5–7 second bursts until easily spreadable.
Prepare garlic and herbs
Finely mince the garlic cloves and chop the fresh parsley. Measure out the grated Parmesan, olive oil, salt, pepper, and red pepper flakes (if using).
Mix butter compound
In a medium bowl, combine the softened butter, minced garlic, chopped parsley, olive oil, grated Parmesan, salt, black pepper, and red pepper flakes. Stir thoroughly with a spatula or fork until evenly blended and smooth. Taste and adjust salt or garlic if needed.
Assemble & Bake
Preheat oven
Preheat the oven to 400°F (200°C). Position a rack in the middle of the oven. If using a broiler finish (optional), ensure the top rack is available and an oven-safe sheet or tray is ready.
Prepare the bread
Using a serrated knife, slice the baguette in half lengthwise to create two long pieces. If you prefer pull-apart slices, instead cut 1-inch thick diagonal slices but do not cut all the way through (leave the base intact). Pat the cut surfaces lightly with a paper towel to remove excess moisture.
Add mozzarella
Arrange the fresh mozzarella slices evenly over the buttered surface, slightly overlapping as needed to cover. Sprinkle the extra 1/2 cup shredded mozzarella evenly on top for a golden, bubbly finish.
Bake until melted
Place the assembled bread on a baking sheet lined with foil or parchment. Bake in the preheated oven for 10–12 minutes, until the cheese is melted and edges of the bread are warm. If you want a browned top, switch to broil for 1–2 minutes—watch closely to avoid burning.
Finish and garnish
Remove from the oven and let rest 2 minutes. If using, tear or chiffonade fresh basil leaves and scatter over the hot cheese. Optionally sprinkle a pinch more grated Parmesan or red pepper flakes.
Slice and serve
Using a sharp knife or pizza cutter, slice the bread into serving portions (about 8 pieces from a standard baguette). Serve immediately while hot and gooey.
