Method

Koji Caramel Sauce Preparation

1

Making the Koji Caramel Sauce

In a saucepan, combine water and granulated sugar over medium heat, stirring until the sugar dissolves completely. Allow the mixture to boil without stirring until it turns a golden amber color.

2

Once the caramel reaches the desired color, remove from heat and carefully whisk in the butter until smooth. Add the koji and a pinch of sea salt, stirring until combined. Let it cool before using.

Coffee Preparation

3

Brewing the Coffee

Brew a double shot of Illy Classico coffee using your preferred method (espresso machine, French press, etc.).

Latte Assembly

4

Combining Ingredients

In a large mug, pour the brewed coffee over the Koji Caramel Sauce (use about 2 tablespoons of the sauce, adjust to taste).

5

Heat your choice of milk until steaming (or froth if desired) and pour it into the coffee mixture, stirring gently to combine.

6

Top with additional caramel sauce if desired, and serve hot. Alternatively, you can pour the mixture over ice for an iced version.
