Prepare the Scallops
Pat the sea scallops dry with paper towels. Season both sides with salt and black pepper.

Prepare the Confit Tomatoes
Preheat the oven to 200°F (90°C). In a baking dish, combine cherry tomatoes, crushed garlic, thyme, and salt. Pour olive oil over the tomatoes to cover them.

Bake the Tomatoes
Place the baking dish in the preheated oven and confit the tomatoes for about 2-3 hours until they are soft and bursting.
Corn and Jimmy Nordello Peppers

Sauté the Corn and Peppers
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the corn kernels and sliced Jimmy Nordello peppers. Season with salt and black pepper. Sauté for about 5-7 minutes until the corn is tender and the peppers are soft.
Poblano Salsa

Make the Poblano Salsa
In a bowl, combine diced roasted poblano peppers, red onion, chopped cilantro, lime juice, and salt. Mix well and adjust seasoning to taste.
