Poaching Eggs

    Prepare the Poaching Water

    Fill a large saucepan with water, add the vinegar, and bring it to a gentle simmer over medium heat.

    Poach the Eggs

    Crack each egg into a small bowl. Carefully slide each egg into the simmering water, one at a time. Poach for about 3-4 minutes, or until the whites are set and the yolks are still runny. Remove with a slotted spoon and place on a paper towel to drain.

Making Hollandaise Sauce

    Melt the Butter

    In a small saucepan, melt the butter over low heat until it’s completely melted and bubbling. Remove from heat.

    Whisk the Egg Yolks

    In a bowl, whisk together the egg yolks and lemon juice until the mixture becomes thick and pale.

    Combine and Emulsify

    Slowly drizzle in the melted butter while whisking continuously until the sauce thickens. Season with salt and a pinch of cayenne pepper. Keep warm.

Assembly

    Toast the English Muffins

    Cut the English muffins in half and toast them until golden brown.

    Assemble the Dish

    On each toasted muffin half, lay two slices of prosciutto. Top with a poached egg and drizzle with hollandaise sauce. Garnish with chopped chives or parsley.
