Prepare the Eggplant

Slice the Eggplant
Wash and slice the eggplants into 1/2 inch thick rounds. Sprinkle salt on both sides and let them sit for about 30 minutes to draw out excess moisture.

Pour in the crushed tomatoes, season with salt and black pepper, and let it simmer for about 15-20 minutes. Stir occasionally until it thickens.

In a large bowl, combine the ricotta cheese, grated Parmesan, shredded mozzarella, egg, and nutmeg. Mix well until smooth.
Assemble the Lasagna

Preheat the oven to 180°C (350°F). In a baking dish, spread a thin layer of tomato sauce at the bottom. Place 3 lasagna sheets on top, then spread 1/3 of the cheese mixture, followed by 1/3 of the fried eggplant and another layer of tomato sauce. Repeat the process two more times, ending with a layer of sauce on top.
