Prepare the Eggplant

    Slice the Eggplant

    Wash and slice the eggplants into 1/2 inch thick rounds. Sprinkle salt on both sides and let them sit for about 30 minutes to draw out excess moisture.

    Cook the Eggplant

    After 30 minutes, rinse the eggplants under cold water and pat them dry. Heat 2 tablespoons of olive oil in a skillet over medium heat and fry the eggplant slices until they are golden brown on both sides, about 3-4 minutes per side. Remove and set aside.

Prepare the Sauce

    Sauté Garlic

    In the same skillet, add another 2 tablespoons of olive oil and the minced garlic. Sauté for about 1-2 minutes until fragrant.

    Add Tomatoes

    Pour in the crushed tomatoes, season with salt and black pepper, and let it simmer for about 15-20 minutes. Stir occasionally until it thickens.

    Add Fresh Basil

    Tear the fresh basil leaves and stir them into the sauce just before removing it from heat.

Prepare the Cheese Mixture

    In a large bowl, combine the ricotta cheese, grated Parmesan, shredded mozzarella, egg, and nutmeg. Mix well until smooth.

Assemble the Lasagna

    Layer Ingredients

    Preheat the oven to 180°C (350°F). In a baking dish, spread a thin layer of tomato sauce at the bottom. Place 3 lasagna sheets on top, then spread 1/3 of the cheese mixture, followed by 1/3 of the fried eggplant and another layer of tomato sauce. Repeat the process two more times, ending with a layer of sauce on top.

    Sprinkle additional mozzarella and Parmesan cheese on top of the final sauce layer.

Bake

    Bake the Lasagna

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes until the top is golden and bubbling.

    Rest Before Serving

    Let the lasagna rest for 10 minutes before slicing and serving to allow the layers to set.
