    Prepare Lemongrass

    Using a sharp knife, cut the lemongrass stalks into smaller pieces about 2 inches long. Gently bruise them with the back of the knife to release their flavor.

    Prepare Apricot

    Wash the apricots thoroughly. Cut each apricot in half, removing the pit, and then chop them into small chunks.

    Muddle Ingredients

    In a mixing glass or cocktail shaker, combine the bruised lemongrass pieces, chopped apricots, and black pepper. Use a muddler or the back of a spoon to gently crush them together to release the flavors.

Mixing

    Add Gin and Simple Syrup

    To the muddled mixture, add 2 cups of gin and 1 tablespoon of simple syrup. Stir the mixture gently to combine.

    Shake with Ice

    Fill the shaker with ice cubes, then secure the lid and shake vigorously for about 15-20 seconds until well chilled.

Serving

    Strain and Serve

    Strain the mixture into a chilled glass filled with fresh ice cubes. Garnish with mint leaves on top.
