Remove the filet mignon from the refrigerator and let them sit at room temperature for about 30 minutes to 1 hour before cooking.

Heat a heavy skillet (preferably cast iron) over medium-high heat for about 5 minutes until hot.

Flip and Cook
Flip the filet mignon and cook for an additional 4-5 minutes for medium-rare, or longer depending on your desired doneness.
Resting and Serving

Rest the Meat
Remove the filet mignon from the skillet and place on a cutting board. Cover loosely with aluminum foil and let them rest for 5-10 minutes.

While the meat is resting, you can prepare optional sides like steamed asparagus or mashed potatoes.
