Steak

    Prepare the Steak

    Season the Denver steak pieces with salt and black pepper on both sides.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Add the seasoned steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest for 5 minutes before slicing.

Pommes

    Prepare the Potatoes

    Peel and cut the potatoes into fries. Rinse them under cold water and soak in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep frying pan or fryer to 350°F (175°C). Drain and pat dry the potatoes. Fry them in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Pepper Sauce

    Prepare the Sauce

    In a saucepan, melt butter over medium heat. Add crushed black peppercorns and cook for 1 minute.

    Finish the Sauce

    Add beef broth and bring to a simmer. Stir in heavy cream and continue to simmer until the sauce thickens, about 5-7 minutes. Season with salt to taste.

Radishes

    Prepare the Radishes

    Wash the radishes thoroughly. Toss them with olive oil and salt in a bowl.

    Roast the Radishes

    Place the radishes on a baking sheet and roast in a preheated oven at 400°F (200°C) for 15-20 minutes until tender and slightly caramelized.

Crispy Alliums

    Prepare the Onions

    Slice the onion thinly and soak in cold water for 10 minutes to reduce the sharpness.

    Fry the Alliums

    Drain and pat the onions dry. Dredge them in flour mixed with salt. Heat vegetable oil in a skillet over medium heat and fry the onions until golden brown and crispy, about 3-5 minutes. Drain on paper towels.
