    Prepare the Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and set aside.

    Cook the Eggs

    In a medium bowl, whisk together the eggs, salt, and black pepper. Heat olive oil in a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring gently until the eggs are scrambled and fully cooked, about 3-4 minutes. Remove from heat.

Assembling the Burrito

    Warm the Tortillas

    In a dry skillet over medium heat, warm the flour tortillas for about 30 seconds on each side until pliable. Remove from heat.

    Fill the Burritos

    Lay a tortilla flat on a plate. Spoon some scrambled eggs onto the center, then add a scoop of black beans, a generous amount of shredded cheese, and a dollop of mashed avocado.

    Roll the Burrito

    Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling completely. Repeat with remaining tortillas and filling.
