Method
Tuna Tartare Preparation
Prepare the Tuna
Dice the Bluefin Tuna into small cubes and place it into a mixing bowl.
Add Seasonings
Add the diced avocado, chopped green onions, sesame oil, soy sauce, and lime juice to the bowl with tuna. Gently mix to combine.
Cocktail Sauce Preparation
Mix Cocktail Sauce
In a small bowl, combine ketchup, horseradish, lemon juice, and Worcestershire sauce. Stir until well blended.
Mignonette Preparation
Prepare Mignonette
Finely chop the shallots and combine them with red wine vinegar and black pepper in a small bowl. Let it sit for at least 10 minutes to allow flavors to meld.
Lemon Melon Preparation
Prepare Lemon Melon
Cut the cantaloupe in half, remove seeds, and scoop out the flesh into small balls or cubes. Toss with lemon zest and mint leaves.
Thai Mayo Preparation
Make Thai Mayo
In a bowl, combine mayonnaise, sriracha, and lime juice. Mix until smooth and well incorporated.
Shrimp Sesame Chips Preparation
Prepare Shrimp Chips
In a dry pan, toast the sesame seeds over medium heat until golden brown. Combine with shrimp chips.
Assembly
Plate the Dish
In a serving bowl, layer the tuna tartare mixture. Drizzle with cocktail sauce and mignonette. Serve with lemon melon, Thai mayo, and shrimp sesame chips on the side.
