Prepare the Avocado
Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until you achieve a creamy consistency. Season with salt, pepper, and chili flakes to taste.

Prepare the Radish
Wash the radishes thoroughly. Slice them thinly using a knife or a mandoline for even slices.
Cooking the Egg

Poach the Eggs
Fill a medium saucepan with water and bring it to a gentle simmer. Add a splash of vinegar to help the eggs hold their shape. Crack each egg into a small bowl and gently slide them into the simmering water. Cook for about 3-4 minutes for a soft yolk or longer for a firmer yolk. Remove the eggs with a slotted spoon and drain on a paper towel.

While the eggs are poaching, toast the sourdough bread slices until golden brown and crispy.

Assemble the Avocado Toast
Spread the mashed avocado evenly over each slice of toasted sourdough. Top with the sliced radishes and a poached egg on each slice. Sprinkle additional chili flakes, salt, and pepper on top if desired.
