Prepare the Filling

In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Stir in the cooked shredded chicken, black beans, cumin, salt, and pepper. Cook for about 5 minutes, then remove from heat.

Assemble the Enchiladas

Preheat the oven to 375°F (190°C). Spread 1 cup of red enchilada sauce on the bottom of a baking dish. Take a corn tortilla, fill it with the chicken mixture, and sprinkle some cheddar cheese inside. Roll the tortilla and place it seam-side down in the baking dish. Repeat with remaining tortillas.

Add Sauce and Cheese

Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheddar cheese.

Bake

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Garnish and Serve

Remove from the oven, let cool slightly, and garnish with fresh chopped cilantro before serving.
