Making the Salted Caramel

Prepare the Caramel

In a medium saucepan, combine the granulated sugar and water. Heat over medium heat until the sugar dissolves, then increase the heat and bring to a boil without stirring. Allow the mixture to boil until it turns a deep amber color.

Add Cream and Butter

Remove from heat and carefully whisk in the heavy cream (it will bubble up). Add butter and sea salt, stirring until smooth. Set aside to cool.

Making the Truffle Base

Melt Chocolate

In a heatproof bowl, combine the dark chocolate and unsalted butter. Set over a pot of simmering water and stir until melted and smooth.

Combine with Cream

In a separate saucepan, heat the heavy cream until just simmering. Pour the hot cream over the melted chocolate and butter, and let sit for 5 minutes. Stir until fully combined.

Add Caramel

Once the chocolate mixture is smooth, fold in the cooled salted caramel until evenly distributed.

Chill Mixture

Cover the mixture and refrigerate for about 2 hours, or until firm enough to scoop.

Forming the Truffles

Scoop and Roll

Using a melon baller or tablespoon, scoop out small portions of the mixture and roll into balls. Roll each ball in cocoa powder to coat.

Place the coated truffles on a baking sheet lined with parchment paper and chill for another 30 minutes before serving.
