Slice the Potatoes

Wash and peel the Russet potatoes. Using a sharp knife or a mandoline slicer, cut the potatoes into very thin slices (about 1/16 inch thick).

Soak the Potatoes

Place the sliced potatoes in a bowl of cold water and let them soak for at least 30 minutes. This will help remove excess starch and make the chips crispier.

Frying

Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Chips

Remove the potatoes from the water and pat them dry with paper towels. Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 3-5 minutes.

Drain and Season

Remove the chips from the oil using a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with sea salt, paprika, garlic powder, onion powder, and black pepper to taste.
