Truffle Preparation
Melt the Chocolate
Chop the dark chocolate into small pieces and place in a heatproof bowl. In a small saucepan, heat the heavy cream until just simmering, then pour it over the chopped chocolate. Let it sit for 2-3 minutes, then stir until smooth.
Combine Ingredients
Add the hazelnut spread and vanilla extract to the melted chocolate mixture. Stir until fully combined and smooth. Allow the mixture to cool to room temperature.
Chill the Mixture
Cover the bowl with plastic wrap and refrigerate for about 2 hours, or until the mixture is firm enough to scoop.
Truffle Forming and Coating
Form the Truffles
Once the mixture is firm, use a small cookie scoop or your hands to form small balls, about 1 inch in diameter.
Coat the Truffles
Roll the truffles in either finely chopped hazelnuts or cocoa powder to coat. Place them on a baking sheet lined with parchment paper.
Chill Again
Refrigerate the coated truffles for at least 30 minutes to set.
