Chocolate Ganache
Coating
Method
Making the Ganache
Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heat-proof bowl.
Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.
Combine Cream and Chocolate
Pour the hot cream over the chopped chocolate and let it sit for a minute to melt the chocolate.
Stir in Butter
Stir the mixture gently until smooth. Then add the unsalted butter and mix until fully incorporated.
Chill the Ganache
Cover the bowl with plastic wrap and refrigerate for about 2 hours, or until the ganache is firm enough to scoop.
Forming the Truffles
Scoop the Ganache
Using a melon baller or small spoon, scoop out portions of the chilled ganache and roll them into balls with your hands.
Coat the Truffles
Roll the truffles in cocoa powder, chopped nuts, or chocolate shavings to coat them.
Chill Again
Place the coated truffles on a baking sheet lined with parchment paper and refrigerate until set, about 30 minutes.
