Dough Preparation

Make the Dough

In a large bowl, mix the all-purpose flour and salt. Gradually add water and knead until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling

In a bowl, combine ground beef, green onion, diced apricots, soy sauce, ginger, and garlic. Mix well and set aside.

Assemble Potstickers

Roll the dough into small rounds (about 3 inches in diameter). Place a teaspoon of filling in the center of each round. Fold and seal the edges, making pleats if desired.

Cooking

Fry the Potstickers

Heat vegetable oil in a skillet over medium heat. Place potstickers in the skillet and fry until the bottoms are golden brown. Add a little water (about 1/4 cup), cover, and steam for 5-7 minutes.

Finish Cooking

Remove the lid and continue to cook until the water evaporates and the potstickers are crispy.

Serve potstickers on a bed of arugula, drizzled with Peking sauce and sprinkled with sesame seeds.
