Salmon Preparation

Marinate Salmon

In a bowl, combine olive oil, chipotle powder, lime juice, salt, and black pepper. Add the salmon fillets and marinate for at least 30 minutes.

Cook Salmon

Preheat grill or skillet over medium-high heat. Cook the salmon for about 4-5 minutes on each side or until cooked through.

Make Dressing

In a blender, combine avocado, Greek yogurt, parsley, lemon juice, garlic, and salt. Blend until smooth and creamy.

Roasted Corn & Quinoa Salad

Prepare Quinoa

Rinse quinoa under cold water. In a saucepan, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes.

Roast Corn

In a skillet, heat olive oil over medium heat. Add corn and sauté for 5-7 minutes until slightly charred.

Mix Salad

In a bowl, combine cooked quinoa, roasted corn, diced red bell pepper, chopped red onion, cilantro, lime juice, and salt. Toss to combine.

Asparagus Preparation

Roast Asparagus

Preheat oven to 400°F (200°C). Toss asparagus with olive oil and salt. Spread on a baking sheet and roast for 10-12 minutes until tender.
