Prepare the Thyme Syrup

In a small saucepan, combine 1 cup of water and 3 tablespoons of sugar. Add the fresh thyme leaves and bring to a simmer over medium heat. Stir until the sugar is dissolved. Remove from heat and let it steep for 15 minutes. Strain the syrup into a bowl and discard the thyme leaves.

Blend the Blueberries

In a blender, combine the fresh blueberries, lemon juice, and the thyme syrup you just prepared. Blend until smooth.

Mix in Limoncello

Add the limoncello to the blueberry mixture and blend for another 30 seconds until well combined.

Freeze the Mixture

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. If you don't have an ice cream maker, pour the mixture into a shallow dish and freeze for about 4-6 hours, stirring every 30 minutes until it reaches a sorbet consistency.

Serve

Once the sorbet is frozen, scoop it into bowls and serve immediately. Garnish with fresh thyme or additional blueberries if desired.
