Make simple syrup

Combine 2 cups granulated sugar and 1 cup water in a small saucepan. Stir over medium heat until sugar fully dissolves and the mixture is clear. Do not boil vigorously; a gentle simmer for 2–3 minutes is enough. Remove from heat.

Add body and mouthfeel

Stir in 1/2 cup light corn syrup (or glucose syrup) while the syrup is still warm. This increases viscosity and prevents rapid dilution when carbonated. Cool to warm/room temperature (about 20–30 minutes).

Flavoring Concentrates (choose or blend)

Prepare flavor infusion: For a citrus soda, combine 1/2 cup fresh lemon juice, 1/4 cup fresh lime juice and 1 tablespoon orange zest in a heatproof bowl. For a ginger soda, muddle or gently bruise 2 tablespoons thinly sliced fresh ginger. For a cola-like base, have 2 tsp cola extract and 2 tsp vanilla ready. For a mint soda, lightly bruise 10 mint leaves to release oils.

Infuse flavors into the warm simple syrup: Return the cooled-but-still-warm syrup to low heat (do not boil). Add your chosen flavor ingredients: citrus mixture or ginger slices or mint leaves or cola/vanilla. Heat gently for 5–7 minutes to allow oils and aromatics to transfer. If using fresh citrus, do not simmer hard — gentle warming preserves bright flavor. For cola style, stir in cola and vanilla extract off-heat to preserve volatile notes.

Strain: Remove from heat and let steep for 10 minutes. Strain the syrup through a fine mesh sieve or cheesecloth into a clean container to remove solids (zest, ginger, mint). Press gently on solids to extract flavor but avoid forcing bitter oils from zest. Cool completely to room temperature, then refrigerate until cold (about 30 minutes).

Adjust acidity and bitterness: Once the flavored syrup is cold, stir in 1 teaspoon citric acid to brighten the soda. If you want a winey/tangy note, add 1/2 tsp tartaric acid. For a tonic-style bitterness, stir in up to 2 teaspoons of tonic quinine solution (start with less and taste). Mix thoroughly until dissolved.

Taste and balance: Sample a small portion diluted with chilled sparkling water (see ratio below). If the syrup tastes too sweet, add a small pinch more citric acid; if too sharp, add a teaspoon of water or a dash of simple syrup. Adjust flavors incrementally — record changes.

Carbonation & Finishing

Dilution and serving ratio: Typical house soft drink ratio is 1 part flavored syrup to 4–6 parts sparkling water depending on desired sweetness and intensity. For a balanced soda start with 1:5 (1 part syrup to 5 parts soda): in a tall pitcher, combine 1 cup chilled flavored syrup with 5 cups chilled sparkling water.

Assemble and serve: Fill glasses with ice (about 1/2 cup ice per 8 oz glass). Pour soda mixture over ice. Garnish each glass with fresh citrus slices or a mint sprig as appropriate. Serve immediately to preserve carbonation.

Storage: Refrigerate leftover syrup in a sealed jar for up to 2 weeks. Keep syrup cold and add to chilled sparkling water when ready to serve. Do not carbonate prepared mixed drink in a bottle — mix just before serving for best fizz.
