Whisk eggs

Crack the 6 large eggs into a medium bowl. Add 3 tablespoons whole milk, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Whisk vigorously until fully combined and slightly frothy (about 20–30 seconds). Set aside.

Prepare aromatics while eggs rest. Finely mince 1 shallot and thinly slice 2 tablespoons chives. Chop 1 tablespoon fresh dill. If using capers, rinse and drain 1 tablespoon to reduce brininess. Zest half a lemon and cut into quarters. Keep these ready to add at the right times.

Cook aromatics

Heat a nonstick skillet over medium-low heat. Add 1.5 tablespoons unsalted butter and 1/2 teaspoon olive oil. When the butter has melted and begins to foam (do not brown), add the minced shallot. Sauté gently for about 1–2 minutes until softened and translucent but not browned.

Make the scramble

Raise heat to medium-low to low (the key is gentle heat). Pour the whisked eggs into the skillet over the softened shallot. Let the eggs sit undisturbed for about 10–15 seconds so they begin to set on the bottom.

Using a silicone spatula, push the eggs from the edges toward the center, forming soft curds. Continue gently folding and moving the eggs every 10–15 seconds so they cook evenly. Total cooking time should be about 3–4 minutes for soft, custardy curds (remove from heat just before fully set, as residual heat will continue to cook them).

Add smoked salmon & herbs

When the eggs are mostly set but still slightly wet, fold in the 6 oz torn smoked salmon pieces, 2 tablespoons sliced chives (reserve a pinch for garnish), and 1 tablespoon chopped dill. Gently fold to combine so that the salmon warms through but does not overcook (about 30–45 seconds). If using capers, stir them in now.

Finish & season

Remove the pan from heat. Stir in 2 tablespoons softened cream cheese or crème fraîche if using for extra creaminess; it will melt into the eggs and create a silky texture. Taste and adjust seasoning — add a small pinch of salt if needed and more pepper to taste. Squeeze a little lemon juice from one quarter of the lemon over the scramble and sprinkle the lemon zest for brightness.

Serve

Transfer the scramble to a warm plate or directly onto toasted bread or bagels (4 slices). Garnish with reserved chives and an extra sprinkle of dill. Serve immediately with remaining lemon quarters on the side.
