Combine base spirits and modifiers
In a mixing glass or shaker, add the gin, port, fresh lemon juice, simple syrup, and Angostura bitters. Add 3 large ice cubes.
Stir to chill and dilute
Using a bar spoon, stir the mixture briskly for 20–30 seconds (about 20–30 full rotations) until well chilled and slightly diluted. If you prefer a slightly more aerated texture, give a few extra slow, controlled spins.
Prepare wine pour
Discard ice or water from the chilled serving glass. Carefully measure 3 oz of chilled Petite Sirah and set aside near your work station.
Garnish
Express the oils of the orange peel over the drink by holding it over the glass and giving a quick twist, then run the peel around the rim and drop it into the drink as garnish.
Serve immediately while chilled. Sip and enjoy the interplay of Petite Sirah fruit, gin botanicals, and port sweetness balanced by lemon and bitters.
