Ranchero Sauce
Add tomatoes and simmer
Add the crushed tomatoes, tomato paste, ground cumin, dried oregano, 1 teaspoon salt, 1/2 teaspoon sugar (if using), and 1/4 cup water to the skillet. Stir to combine, bring to a gentle simmer, reduce heat to low, and cook 8–10 minutes, stirring occasionally, until sauce thickens slightly and flavors meld. Taste and adjust salt and pepper.
Keep the sauce warm over the lowest heat while you prepare tortillas and eggs, stirring occasionally. If sauce gets too thick, add a tablespoon of water at a time to reach desired consistency.

Crisp the tortillas
Heat a large nonstick or cast-iron skillet over medium-high heat. Add 2 tablespoons vegetable oil and let it warm for 30 seconds. One at a time, fry each corn tortilla 20–30 seconds per side until edges are blistered and slightly crisp but still pliable. Transfer to a plate lined with paper towels and keep warm in a low oven (200°F / 95°C) or covered with a kitchen towel. Add more oil as needed for remaining tortillas.
Warm the beans
In a small saucepan or in the same skillet (wipe out excess oil), warm 1 cup of refried black beans over low heat until heated through, stirring occasionally. If too thick, stir in 1–2 tablespoons water to reach a spreadable consistency.
Assemble base
Place one warmed, crisped tortilla on each serving plate. Spread about 1/4 cup of warmed refried beans evenly over each tortilla. Sprinkle each with about 3/4 ounce (approx. 3/4 of the shredded cheese amount per tortilla) if you prefer cheese under the egg, or reserve cheese for topping.

Fry the eggs
In a skillet over medium heat melt 1 tablespoon butter. Crack eggs into the skillet (work in two batches if needed) and cook sunny-side up until whites are set but yolks are runny, about 3–4 minutes. For over-easy, flip carefully and cook 15–30 seconds more. Season eggs with 1/2 teaspoon salt and black pepper to taste while cooking.
Finish assembly
Place a fried egg on top of the beans and tortilla for each serving. Spoon about 1/3–1/2 cup of warm ranchero sauce over each egg (or serve sauce on the side). Sprinkle remaining shredded cheese and crumbled queso fresco or cotija over the top so it melts slightly from the hot sauce and egg. Garnish with chopped cilantro, sliced avocado, pickled red onion, and a lime wedge. Offer hot sauce on the side.
Serving
Serve immediately while the tortillas, eggs, and sauce are hot. Each serving is best eaten right away so the tortilla stays slightly crisp underneath and the yolk mixes with the sauce and beans.
