Juice and combine

Juice limes until you have 1 cup of fresh lime juice and juice a lemon for 1/4 cup lemon juice. Strain juices through a fine-mesh sieve into a measuring cup to remove pulp and seeds.

In a large jar or pitcher, combine the strained lime juice, lemon juice, agave nectar (or simple syrup) and orange liqueur. Stir until the agave is fully incorporated. This is your house margarita mix. Chill in the refrigerator if not using immediately.

Prepare glass rim

Rub a lime wedge around the rim of a rocks or coupe glass. Spread the coarse salt on a small plate and press the wet rim into the salt to coat. Set the glass aside.

Shake and strain

Fill a cocktail shaker with about 3/4 cup ice. Add 3 ounces (6 tablespoons) of the house margarita mix and 3 ounces (6 tablespoons) of blanco tequila (ratio 1:1 mix to tequila). Alternatively, for a stronger drink use 2 oz tequila to 1 oz mix. Add a small handful of ice, secure the shaker and shake vigorously for 10–15 seconds until well chilled.

Strain the cocktail into the prepared glass over fresh ice (or serve neat in a chilled coupe). Garnish with a lime wedge on the rim.

Batching (optional)

To make a pitcher/batched version: combine the prepared house margarita mix (from the Margarita Mix section) with the 2 cups of blanco tequila in a pitcher. Stir to combine and refrigerate. When serving, fill a glass with ice, pour 6 oz of the batched margarita (approximately 3 oz mix + 3 oz tequila) over ice, and garnish with a lime wedge. Keep refrigerated and consume within 48 hours for best freshness.
