Mix dry ingredients
In a large bowl whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.
Combine wet ingredients
In a separate bowl or large measuring cup whisk the whole milk, eggs, and vanilla extract until smooth and slightly frothy.
Make a smooth batter
Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or whisk until mostly smooth. Small lumps are fine — avoid overmixing. The batter should be pourable but slightly thick, like a thin pancake batter. If too thick, add up to 2 tablespoons additional milk; if too thin, add 1–2 tablespoons flour.

Heat oil
Pour vegetable oil into a deep heavy-bottomed pot or Dutch oven to a depth of about 2–3 inches (roughly covering the bottom and allowing fries to float). Heat over medium-high heat until the oil reaches 350°F (175°C). If you don't have a thermometer, test with a small drop of batter — it should sizzle and rise immediately but not burn.
Prepare batter dispenser
Pour batter into a sturdy squeeze bottle with a narrow tip, a piping bag fitted with a medium round tip, or a heavy-duty resealable plastic bag with a small corner snipped off. This allows you to pipe 'fries' directly into the oil.
Fry funnel cake fries (batching)
Working in batches (do not overcrowd), carefully pipe 4–6 long strips (3–4 inches each) of batter into the hot oil, keeping them separate so they fry individually. Fry for 2–3 minutes, turning once with tongs or a slotted spoon as the underside browns, until golden brown and cooked through. Total fry time should be about 3–4 minutes per batch depending on thickness and oil temperature.
Drain and season
Use a slotted spoon or spider to transfer the cooked funnel cake fries to a wire rack set over a baking sheet or to paper towels to drain. If desired, sprinkle a light pinch (about 1/8–1/4 tsp) of salt over the hot fries to enhance flavor.
Dust with powdered sugar
While still warm, place the powdered sugar and optional cinnamon in a fine-mesh sieve or sifter and dust liberally over the fries. For an even coating, toss fries briefly in a bowl with the powdered sugar mixture.
Serve
Serve the funnel cake fries immediately while warm and crisp. Optionally offer dipping sauces such as chocolate sauce, caramel, or fruit jam alongside.
