Mix the rub

In a small bowl combine brown sugar, smoked paprika, kosher salt, black pepper, garlic powder, onion powder, cayenne and cumin. Whisk thoroughly to break up any brown sugar lumps so the rub is evenly mixed.

Pat ribs dry with paper towels. Using a sharp knife or your fingers, remove the thin silverskin membrane from the bone side if still attached. This helps the rub penetrate and the ribs to become tender.

Generously rub the mixture over both sides of the ribs, pressing it into the meat. Let the rubbed ribs rest at room temperature for 20–30 minutes or refrigerate (covered) for up to 4 hours for deeper flavor.

Sear the ribs

Preheat oven to 300°F (150°C). Heat a large, ovenproof Dutch oven or heavy ovenproof skillet over medium-high heat and add 1 tablespoon olive oil. When oil is shimmering, sear ribs (work in two batches if needed) for 2–3 minutes per side until a deep golden crust forms. Transfer seared ribs to a plate.

Build braising base

Reduce heat to medium. Add sliced onion to the same pot and sauté 4–5 minutes until softened and starting to brown, scraping up browned bits. Add smashed garlic and sauté 30–45 seconds until fragrant.

Stir in apple cider vinegar and soy sauce, scraping the bottom to deglaze. Allow the vinegar to reduce slightly (~1 minute). Add chicken stock (or water), honey, thyme sprigs and bay leaf and bring to a gentle simmer.

Nest the seared ribs back into the pot, bone-side down or standing on edge so they fit. There should be enough braising liquid to come about 1/3 up the sides of the ribs. If not, add up to 1/2 cup more stock or water.

Cover the pot with a tight-fitting lid and transfer to the preheated oven. Braise until ribs are tender and pull easily from the bone, about 2 to 2.25 hours. Check once at ~90 minutes to ensure liquid hasn't evaporated—add a splash of stock if necessary.

When ribs are fork-tender, carefully remove the pot from oven. Transfer ribs to a rimmed baking sheet or cutting board and tent loosely with foil to rest 10 minutes. Strain braising liquid into a measuring cup and skim off excess fat if desired; reserve the strained liquid for finishing sauce.

Make the glaze

In a small saucepan combine reserved braising liquid (about 1/2 to 3/4 cup), BBQ sauce, hot sauce (if using) and butter. Bring to a low simmer over medium-low heat and reduce gently for 4–6 minutes until saucy and slightly thickened. Taste and adjust seasoning — add a pinch of salt, more honey, or a squeeze of vinegar if needed.

Brush a generous layer of the warm glaze over the rested ribs. For a sticky finish, place glazed ribs under a broiler on high for 2–3 minutes, watching closely so the sugars do not burn. Remove when glaze is caramelized and shiny.

Let ribs rest 5 minutes after broiling. Slice between the bones into individual ribs or sections.

Serve

Arrange ribs on a platter, spoon any remaining glaze over top, and scatter chopped cilantro or parsley. Serve with lemon or lime wedges to brighten the flavors.
