Remove mozzarella sticks from packaging and pat dry with paper towels to remove surface moisture. Place on a baking sheet lined with parchment. Freeze uncovered for at least 30 minutes (best 60 minutes) to firm the cheese — this reduces melting during frying.

While cheese chills, set up a three-bowl breading station: Bowl 1 – flour seasoned with 1/4 tsp salt and a pinch of pepper. Bowl 2 – whisk together 3 eggs and 2 tablespoons milk until smooth. Bowl 3 – combine 2 cups breadcrumbs, 1 tablespoon grated Parmesan, 1 tsp Italian seasoning, 1 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp kosher salt and freshly ground black pepper to taste.

Remove 3–4 chilled mozzarella sticks from the freezer at a time. Dredge each stick in the seasoned flour, shaking off excess so a light, even coat remains.

Egg wash

Dip the floured stick into the beaten egg mixture, ensuring full coverage and letting excess drip back into the bowl.

Breadcrumbs

Roll the egg-coated stick in the breadcrumb mixture, pressing gently so crumbs adhere. Place breaded sticks on a clean tray and return to the freezer for 10–15 minutes to set the coating.

Optional double breading

For a thicker, crunchier crust: repeat the egg dip (use the additional beaten egg + 1 tsp milk) and roll in the additional breadcrumbs. Return to the freezer 10–15 minutes after double coating. Ensure each stick is firm before frying.

Frying (Deep-Fry Method)

Pour oil into a deep, heavy-bottomed pot to a depth of about 2–3 inches (approx. 3–4 cups depending on pot). Heat oil to 350°F (175°C). If you don’t have a thermometer, test by dropping a small crumb into oil — it should sizzle and float immediately without browning instantly.

Fry in small batches (3–4 sticks at a time) so oil temperature remains steady. Fry each batch for 45–60 seconds, turning once, until golden brown and crisp. Do not overcook — a long fry will burst the cheese.

Using a slotted spoon or spider, transfer fried sticks to a wire rack set over a sheet pan or to paper towels to drain. Let rest 1–2 minutes before serving — cheese will be extremely hot inside.

Alternative: Oven Method (Baked)

Preheat oven to 425°F (220°C). Place breaded sticks on a baking sheet lined with parchment and sprayed lightly with oil or use a wire rack over a sheet pan. Lightly mist the tops of sticks with cooking spray or brush with a little oil.

Bake for 8–12 minutes until golden and coating is crisp, turning once halfway. Watch closely — over-baking will cause cheese leakage. For extra crispiness, finish with 1–2 minutes under the broiler, watching constantly.
