Prepare glass

Run the lemon wedge around the rim of a highball or pint glass. Dip the rim into the coarse salt or celery salt spread on a small plate to coat. Fill the glass with ice cubes and set aside.

Mix cocktail

In a cocktail shaker (or a large mixing glass), add vodka (2 oz), tomato juice (4 oz), fresh lemon juice (0.5 oz), Worcestershire sauce (0.5 tsp), prepared horseradish (0.5 tsp), hot sauce (2 dashes), olive brine or pickle juice (0.5 tsp), celery salt (1 tsp) and freshly ground black pepper (0.25 tsp). Do not add ice to the shaker if you prefer less dilution; otherwise add a small handful of ice.

Combine and chill

If using a shaker with ice, cap and shake gently 5–8 seconds to chill and combine but avoid heavy frothing. If using a mixing glass, stir with a bar spoon for 8–12 seconds until well chilled and slightly diluted.

Taste and adjust

Strain or pour the mixture into the prepared ice-filled serving glass. Taste and adjust seasoning if needed: add an extra dash of hot sauce for heat, a little more Worcestershire for umami, or a pinch more celery salt or black pepper to season.

Garnish and serve

Garnish with the celery stalk and the optional garnishes (olive, pickled green bean, cherry tomato, or cooked bacon) skewered on a cocktail pick or nestled in the glass. Place the lemon wedge on the rim or serve alongside. Serve immediately.
