Toast bread

Preheat a toaster or skillet. Lightly brush both sides of each bread slice with the olive oil (or spread butter if using). Toast the bread until golden and crisp, about 2–3 minutes per side in a skillet or 2–4 minutes in a toaster depending on thickness. Remove and set aside.

Prepare avocado

Cut the avocado lengthwise around the pit. Twist halves apart, remove and discard the pit, and scoop the flesh into a bowl. Mash with a fork until slightly chunky or smooth, according to preference.

Season avocado

Add the lemon juice, 1/2 teaspoon of the salt, and 1/4 teaspoon of the black pepper to the mashed avocado. Stir to combine and taste; adjust salt and pepper as needed.

Assemble on toast

Divide the avocado mixture evenly between the two toasted bread slices and spread to cover. Sprinkle the remaining 1/2 teaspoon salt lightly over both to balance flavor.

Seasoning & Finish

Finish each slice with a light drizzle of extra-virgin olive oil (if any left) and a pinch of red pepper flakes if using. Scatter the microgreens or chopped herbs on top for freshness.

Tomato and cheese option

If using cherry tomatoes and cheese, halve the tomatoes and arrange over the avocado, then crumble the feta or goat cheese on top.

Egg option

For a protein boost, top one or both slices with a soft-boiled, poached, or fried egg. If soft-boiling, cook eggs in boiling water for 6–7 minutes for jammy yolks, then cool briefly in ice water, peel, and halve to place on toast.
