Prepare batter

Mash bananas and combine wet

In a medium bowl, mash the ripe bananas with a fork until mostly smooth with a few small chunks remaining (about 1/4–1/2 cup texture). Add the eggs, milk, melted butter, light brown sugar, vanilla extract and whiskey. Whisk until fully combined and slightly frothy.

Mix dry ingredients

In a separate large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon and ground nutmeg until evenly distributed.

Combine wet and dry

Make a well in the center of the dry ingredients and pour in the wet banana mixture. Stir gently with a spatula until just combined; a few lumps are fine. Do not overmix—overworking will make pancakes tough.

Fold in add-ins

Fold in 1/2 cup of the chopped walnuts, reserving the remaining 1/4 cup for topping. Let the batter rest 5 minutes to allow baking powder to start reacting and flavors to meld.

Cook pancakes

Preheat pan or griddle

Heat a nonstick skillet or griddle over medium heat until hot. Brush or swirl about 1/2 teaspoon of butter or oil per pancake to coat the surface.

Spoon and cook

For each pancake, pour about 1/4 cup of batter onto the hot surface, spacing pancakes about 1 1/2 inches apart. If desired, press a few extra banana slices and a few chopped walnuts onto the tops of each pancake. Cook until bubbles form across the surface and edges look set, about 2–3 minutes.

Flip and finish

Flip each pancake and cook the second side until golden brown and cooked through, about 1–2 minutes more. Adjust heat as needed to prevent burning; reduce to medium-low if pancakes brown too quickly.

Keep warm

Transfer cooked pancakes to a warm oven (200°F / 95°C) or a covered plate while you finish the rest to keep them warm and tender.

Serve

Stack pancakes, drizzle with maple syrup, sprinkle reserved chopped walnuts on top and dust with powdered sugar if using. Serve immediately so the whiskey aroma is bright—if you prefer a stronger whiskey note, lightly drizzle an extra teaspoon of whiskey over the warm pancakes just before serving (optional).
