Boil water

Measure 2 cups of fresh cold water and bring to a rolling boil in a kettle or small saucepan over high heat.

Warm teapot or cup (optional)

If using a teapot, pour a little boiling water into it, swirl to warm the pot, then discard that water. This helps maintain steep temperature.

Add tea

Place 2 tea bags into the warmed teapot or into two cups (or measure about 2 tablespoons loose-leaf tea into an infuser).

Pour water and steep

Pour the just-boiled water over the tea bags or infuser. Steep black tea for 3 to 5 minutes depending on desired strength (3 minutes for lighter, 5 for stronger). Cover while steeping to retain heat.

Remove tea

After steeping, remove the tea bags or infuser to avoid bitterness. Gently press a tea bag against the cup edge with a spoon if you prefer a touch stronger flavor.

Sweeten and finish

Stir in 1 teaspoon honey or sugar to taste while the tea is hot so it dissolves fully. If using milk, add 2 tablespoons milk now and stir. For a lemon tea, add one or two fresh lemon slices. Add mint leaves for a fresh note.

Serve

Pour into cups if brewed in a teapot. Taste and adjust sweetness, milk, or lemon. Serve immediately.
