Base Syrups & Concentrates
Make simple syrup
Combine 1 cup sugar and 1 cup water in a small saucepan. Heat over medium, stirring until sugar dissolves. Bring to a gentle simmer for 1 minute, then remove from heat and cool to room temperature. (Yields about 1 cup.)
Prepare fruit purée or juice
If using fresh fruit, blend 1 cup fresh or frozen fruit until smooth, then strain through a fine-mesh sieve to yield about 1/2 cup purée (alternatively use 1/2 cup store-bought juice). If using thicker purée, thin with a tablespoon of water to reach a syrupy consistency.
Brighten with citrus
If using, squeeze 1/4 cup fresh lemon or lime juice and mix into the purée or syrup. This adds acidity and brightness to balance sweetness.
Carbonation & Mixers
Chill club soda or sparkling water thoroughly before mixing. Have tonic water chilled if using.
Combine syrup and mixer
In a pitcher, combine the prepared simple syrup and fruit purée/juice mixture. For a standard gentle-flavored soft drink, use 1/4 cup combined syrup + purée mixture per 1 cup of sparkling water. To make four servings (about 12 oz each), mix 1 cup flavored syrup/purée blend with 4 cups chilled club soda. Stir gently to combine without losing too much carbonation.
Flavorings & Seasonings
Add optional flavorings to the combined beverage: 1/2 tsp vanilla for cola-like notes (stir in), 2 tablespoons lightly muddled fresh herbs (tuck into the pitcher or bruised and added to each glass), or 4 dashes of aromatic bitters if you want complexity. Taste and adjust: add more syrup for sweetness or more citrus for brightness.
Garnish & Serving
Prepare glasses: fill 4 glasses with about 1/2 cup (approx. 2–3 ice cubes) ice each or distribute 2 cups of ice across the four glasses. Pour the mixed soft drink evenly among the glasses (about 1 cup each), then top with remaining chilled club soda or tonic to taste if you prefer lighter carbonation or a longer drink.
Garnish each glass with a citrus wheel, a slice of fruit, and/or a sprig of mint or basil. Serve immediately while fizzy.
