Whisk eggs

Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt and 1 teaspoon freshly ground black pepper. Whisk vigorously until mixture is uniform, slightly frothy and pale yellow (about 20–30 seconds). Set aside.

Prepare Fillings

If using optional cooked fillings (mushrooms, bell pepper, ham/bacon, spinach), sauté them first: heat a small skillet over medium heat, add 1 teaspoon olive oil. Add mushrooms and bell pepper and cook, stirring, until softened and any liquid has evaporated (3–5 minutes). Add cooked ham or bacon just to warm, and wilt spinach separately if using. Season fillings lightly with salt and pepper. Transfer to a plate and keep warm.

Grate 1 ounce cheddar and chop herbs (1 tablespoon chives and 1 tablespoon parsley). Keep ready for assembly.

Cook Omelette

Place a nonstick or well-seasoned 8–10 inch skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. If you plan to cook at slightly higher heat, add 1 teaspoon olive oil with the butter to prevent burning.

When butter is foamy but not browning (about 30–45 seconds), give the egg mixture a quick re-whisk and pour into the center of the pan. Let the eggs sit undisturbed for 10–15 seconds until edges begin to set.

Using a heatproof spatula, gently push the cooked edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Repeat around the pan until most of the surface is set but top is still slightly glossy and a little wetter than fully cooked (about 60–90 seconds total).

Sprinkle the grated cheddar evenly over one half of the omelette, then add chopped herbs and any prepared fillings (mushrooms, peppers, ham, spinach) on top of the cheese.

Using the spatula, carefully lift the opposite half of the omelette and fold it over the fillings to form a half-moon. Let it cook for another 20–30 seconds to melt the cheese and finish cooking, keeping the interior tender.

Slide the omelette onto a plate seam-side down. Taste and adjust seasoning with additional salt and freshly ground black pepper. Serve immediately with hot sauce or salsa if desired.

For a creamier omelette, replace milk with heavy cream or crème fraîche (use the same volume). For herb variations, try tarragon or chives. To make multiple omelettes, cook them one at a time for best texture.
