Prepare fillings and bread
Remove cheeses from the refrigerator so they come slightly closer to room temperature (10–15 minutes) — this helps them melt more evenly. Lay out 8 slices of sourdough on a clean work surface. On four slices, spread 1/2 teaspoon Dijon mustard across each (total 2 tsp). On the other four slices, spread 1/2 tablespoon mayonnaise on each (total 2 tbsp).
Assemble sandwiches
On each of the four mustard-spread slices, layer 2 oz (approx. two thin slices folded) of ham. Evenly distribute cheddar and Swiss cheese across the four sandwiches so each gets 1 oz cheddar and 1 oz Swiss (total 2 oz cheese per sandwich). Add an optional slice or two of pickle if using. Top each with the mayonnaise-spread bread slice, mayonnaise side down, to form four sandwiches.
Butter the bread
Soften the unsalted butter if needed, then spread about 1 tablespoon of butter on the outside face of each sandwich (both top and bottom) so each sandwich uses ~2 tbsp butter. Sprinkle a light pinch of black pepper across the exposed buttered surfaces or directly on the sandwiches, dividing the 1 tsp among the four sandwiches.
Cook on stovetop
Heat a large nonstick skillet or griddle over medium-low to medium heat for 2–3 minutes until warm. Place two sandwiches in the pan (don’t overcrowd). Cook for 3–4 minutes on the first side with the lid on or a sheet of foil placed lightly over them to encourage even melting; check the underside — it should be golden brown and not burning. Carefully flip each sandwich and cook the second side another 3–4 minutes with the lid on, pressing gently with a spatula to improve contact and encourage melting. Total cook time per sandwich: 6–8 minutes, depending on heat and pan.
Finish and serve
If cheese is not fully melted after stovetop cooking, transfer sandwiches to a preheated oven at 350°F (175°C) for 3–4 minutes on a baking sheet to finish melting. Remove sandwiches, let rest 1 minute, then slice each sandwich in half on the diagonal and serve hot. Serve with optional pickles and an extra pat of butter if desired.
