Sandwich

Prepare bread

Spread 1/2 tablespoon softened butter on one side of each of the 6 bread slices. Heat a large skillet or griddle over medium heat until hot but not smoking.

Toast bread

Place bread butter-side-down in the skillet in two batches (to avoid crowding). Toast until golden brown and crisp, about 2–3 minutes per side. Remove toasted slices to a cutting board, toasted side up. Keep warm.

Mix mayonnaise spread

In a small bowl combine 6 tablespoons mayonnaise with 1 teaspoon Dijon mustard, 1/4 teaspoon freshly ground black pepper and 1/4 teaspoon of the kosher salt (reserve the rest for avocado/tomato). Stir until smooth.

Prepare avocado

Halve and pit the avocado. Scoop flesh into a bowl and mash lightly with a fork so it remains slightly chunky. Season with remaining 1/4 teaspoon kosher salt and a few grinds of black pepper. Set aside.

Slice tomato

Cut the tomato into 3 evenly thick slices (about 1/4 inch each). Lightly season both sides of the slices with a pinch of kosher salt and a little black pepper.

Assemble first layer (base)

Take two toasted bread slices to form the base of the triple-decker club. Spread about 1 tablespoon of the mayo-Dijon mixture on each slice (unt toasted side). On one slice, arrange half the turkey (about 4 oz) in an even layer, then top with 1 slice of cheese and 2 slices of bacon (or broken to fit). Add 2 lettuce leaves on top of the bacon.

Second layer

Place a second toasted slice mayo-side up on top of the first layer to create the middle deck. On that slice spread 1/3 of the mashed avocado (about 3 tbs) evenly. Arrange the tomato slices on top of the avocado, then top with the remaining turkey (about 4 oz) and remaining bacon strips. Add 2 more lettuce leaves.

Top and press

Spread the remaining mayonnaise mixture on the remaining toasted slice and place it mayo-side down to top the sandwich, forming a triple-decker club. Press gently to compact the layers so the sandwich holds together.

Secure and cut

If desired, insert wooden sandwich picks through each quarter to secure layers. Using a sharp serrated knife, cut the sandwich diagonally into 4 triangles (cut across both decks so each quarter contains all layers).

Finish and serve

Arrange sandwich quarters on a platter. Serve immediately with optional pickle spears and potato chips.
