Prepare glass
Select a double old-fashioned glass or a tiki mug. Fill the glass halfway with crushed ice to chill while you build the cocktail.
Measure and combine
In a cocktail shaker, add 2 oz dark/aged rum, 0.5 oz overproof (or Demerara) rum, 0.75 oz fresh lime juice, 0.5 oz fresh grapefruit juice, 0.5 oz orgeat, 0.25 oz simple syrup, and 2 dashes Angostura bitters.
Shake
Add a handful of ice to the shaker (large cubes are fine). Shake vigorously for 10–12 seconds until the outside of the shaker feels cold and slightly frosty.
Float overproof rum (optional)
If you prefer a layered presentation and did not include overproof rum in the shake, carefully pour 0.25–0.5 oz overproof rum over the back of a spoon to float on top of the crushed ice. (This step is optional; in this recipe half the overproof is built into the drink.)
Garnish and serve
Garnish with a sprig of fresh mint (lightly slap it between your palms to release aroma) and a lime wheel or grapefruit twist. Serve with a short straw and a napkin. Enjoy immediately while cold.
