Welcome to THE PURSUIT. Everyone's got somethin' that drives them, and for us, we're all about making good beer for good people. There's a lot more out there than when we started back in '04...fruity, hazy, you name it. Instead, we brewed a straight-up American IPA. That's it. Call it a curveball, call it MAD SCIENCE, call it whatever you want. Just enjoy THE PURSUIT.

In a large mash tun, combine the pale malt and crystal malt with 5 gallons of filtered water. Heat the mixture to 152°F (67°C) and maintain that temperature for 60 minutes.

Mash the Grains

After mashing, sparge the grains with additional hot water (about 170°F or 77°C) until you collect approximately 6.5 gallons of wort in your brew kettle.

Sparging

Bring the wort to a vigorous boil. Once boiling, add the Cascade hops and boil for 60 minutes.

Bring to a Boil

45 minutes into the boil, add the Centennial hops. At 5 minutes remaining, add the Amarillo hops for aroma.

Add Additional Hops

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Transfer the cooled wort to a sanitized fermenter and pitch the American Ale yeast.

Pitch Yeast

Seal the fermenter with an airlock and allow it to ferment at around 68°F (20°C) for 1-2 weeks, or until fermentation has completed.

Fermentation

Sanitize your bottles and caps. Prepare a priming sugar solution (about 3/4 cup of corn sugar dissolved in 2 cups of water) and add it to the bottling bucket.

Prepare Bottles

Siphon the beer from the fermenter into the bottling bucket, mix gently to avoid oxidation, then fill the bottles leaving about 1 inch of headspace.

Bottle the Beer

Cap the bottles securely and store them in a dark, room-temperature area for carbonation (about 1-2 weeks).

Once carbonated, chill the bottles, pour into a glass, and enjoy your homemade American IPA!
