In a large mash tun, combine the pale malt, flaked oats, and Carapils malt with 6 gallons of filtered water. Heat the water to 160°F (71°C) and hold the mash at this temperature for 60 minutes.

Mash the Grains

After mashing, sparge the grains with hot water until you collect approximately 6.5 gallons of wort in your kettle.

Sparging

Bring the wort to a boil over medium-high heat.

Bring to Boil

Once boiling, add 1 oz of Citra hops and 1 oz of Mandarina Bavaria hops. Boil for 60 minutes.

Add Hops

With 10 minutes left in the boil, add the remaining 1 oz of Citra hops and 1 oz of Mandarina Bavaria hops.

Finish Boiling

After the boil is complete, cool the wort quickly using a wort chiller to around 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel and pitch the New England Ale yeast.

Pitch Yeast

Seal the fermentation vessel and let it sit at room temperature for about 2 weeks until fermentation is complete.

Fermentation

After fermentation, add 2 oz of Citra hops and 2 oz of Mandarina Bavaria hops directly to the fermentation vessel. Let it dry hop for 5-7 days.

Dry Hop

After dry hopping, siphon the beer into sanitized bottles, adding priming sugar as needed for carbonation.

Bottle the Beer

Cap the bottles and let them age at room temperature for another 1-2 weeks to allow carbonation to develop.
