This mouthwateringly delicious IPA gets its flavor from a heavy helping of citra and mosaic hops. Don't worry, no fruit was harmed in the making of this beer.

Heat 3 gallons of filtered water to approximately 165°F (74°C). Add the pale malt and caramel/crystal malt, stirring to ensure no dry clumps remain. Maintain the temperature at around 150°F (65°C) for 60 minutes.

Prepare the Mash

After mashing, sparge with an additional 2 gallons of heated water (170°F or 77°C) to extract as much sugar as possible from the grains.

Sparging

Bring the wort to a rolling boil. Once boiling, add 1 oz of Citra hops and 1 oz of Mosaic hops. Boil for 60 minutes.

Boil the Wort

With 15 minutes remaining in the boil, add the remaining 1 oz of Mosaic hops and 1 oz of Cascade hops.

Adding Hops

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the American Ale yeast. Seal the fermenter with an airlock and let it ferment for approximately 1-2 weeks at 68-72°F (20-22°C).

Fermentation

Once fermentation is complete, dissolve 3 oz of corn sugar in 2 cups of boiling water to create a priming solution. Allow it to cool slightly.

Prepare for Bottling

Add the priming solution to the fermenter, then siphon the beer into sanitized bottles, leaving about 1 inch of headspace. Cap the bottles.

Bottle the Beer

Store the bottles in a dark, cool place for about 2 weeks to carbonate the beer.

Age the Beer

After carbonation, chill the bottles in the refrigerator, then serve chilled and enjoy your Fresh Squeezed IPA!
