Heat 3 gallons of filtered water to about 165°F (74°C) in a large pot. Add the crushed Pale Malt, Crystal Malt, and Carapils Malt to the water.

Prepare the Mash

Stir the grains into the water, ensuring there are no dry clumps. Maintain the mash temperature at around 152°F (67°C) for 60 minutes.

After 60 minutes, sparge the grains with 2 gallons of hot water (170°F or 77°C) to rinse out the sugars.

Bring the collected wort to a boil in a large brew kettle.

Boil the Wort

Add Citra hops and Mosaic hops at the start of the boil. After 30 minutes, add Simcoe hops and Amarillo hops. Finally, add Centennial hops in the last 5 minutes of the boil.

After boiling for a total of 60 minutes, cool the wort quickly using a wort chiller or an ice bath.

Cool the Wort

Transfer the cooled wort into a sanitized fermentation vessel. Leave behind any sediment.

Transfer to Fermenter

Sprinkle the American Ale yeast onto the surface of the wort. Seal the fermenter with an airlock.

Pitch the Yeast

Allow the beer to ferment at around 68°F (20°C) for 1-2 weeks, or until fermentation has completed.

Ferment

Dissolve 3 oz of priming sugar in 2 cups of boiled water and let it cool. Add this mixture to the beer in the fermenter.

Prepare Bottling

Bottle the beer using sanitized bottles and caps. Ensure to leave a little space at the top of each bottle.

Store the bottles at room temperature for 1-2 weeks to allow carbonation to develop.
