Lake Street Light, named after the shores we cherish, is a crisp light 96 cal beer supporting our lake sturgeon.

In a large pot, heat 2 liters of filtered water to 70°C (158°F). Add 2 cups of pale malt and 0.5 cups of caramel malt, stirring well. Maintain the temperature for 60 minutes, then remove the grains, allowing the liquid to drain back into the pot.

Malt Preparation

Bring the liquid (wort) to a boil. Once boiling, add 1 tablespoon of Cascade hops and boil for 30 minutes. After 30 minutes, add 0.5 tablespoons of Saaz hops and boil for an additional 15 minutes.

Boiling

After boiling, cool the wort quickly using a wort chiller or ice bath until it reaches approximately 20°C (68°F).

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the packet of American ale yeast on top and seal with an airlock. Allow the beer to ferment at room temperature for 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve 0.5 cups of corn sugar in 1 cup of boiling water to create a priming solution. Add this solution to the fermentation vessel.

Preparing the Bottles

Bottle the beer using sanitized bottles and caps. Ensure each bottle is filled to about 1 inch from the top. Cap the bottles and store them in a dark place at room temperature for 1-2 weeks for carbonation.

Bottling the Beer

After carbonation, chill the bottles in the refrigerator for at least 24 hours. Serve the Lake Street Light in a glass and enjoy the crisp, light flavor!
