As brewers, we get the privilege to sample our beers straight from the tanks in all their raw glory.

In a large brew kettle, heat 5 liters of filtered water to approximately 70°C (160°F).

Heat the Water

Once the water reaches the desired temperature, add 5 cups of Pale Malt, 1 cup of Caramel Malt, and 1 cup of Wheat Malt to the kettle. Stir gently to ensure all grains are submerged.

Add Grains

Maintain the temperature for about 60 minutes, stirring occasionally. This process helps convert the starches in the grains into fermentable sugars.

Mash Process

After mashing, raise the temperature to a boil. Once boiling, remove the grains using a strainer and let the wort boil for 60 minutes.

Boil the Wort

At the start of the 60-minute boil, add 0.5 cups of Citra Hops and 0.5 cups of Mosaic Hops to the kettle. This will provide bitterness and aroma to the beer.

After the boil, cool the wort quickly using a wort chiller or by placing the kettle in an ice bath until it reaches approximately 20°C (68°F).

Cool the Wort

Transfer the cooled wort into a sanitized fermentation vessel. Sprinkle 1 package of American Ale Yeast on top of the wort. Seal the vessel with an airlock.

Allow the beer to ferment in a dark, cool place for about 1-2 weeks, or until fermentation activity has ceased.

Ferment

Sanitize your bottles and caps. Prepare a priming solution by dissolving 3 tablespoons of priming sugar in 1 cup of boiling water.

Prepare Bottles

Once fermentation is complete, gently mix the priming solution into the beer and fill the bottles, leaving about an inch of headspace at the top. Cap the bottles securely.

Bottle the Beer

Store the bottles at room temperature for about 1-2 weeks to allow carbonation to develop.
