Wash the culinary apples thoroughly to remove any pesticides or residues. Core the apples and chop them into small pieces, keeping the skins on for added flavor.

Prepare the Apples

Using a juicer or a food processor, extract the juice from the chopped apples. Strain the juice through a fine mesh sieve or cheesecloth to remove solids, ensuring you collect the liquid in a clean container.

Extract Apple Juice

In a large fermentation vessel, mix the apple juice with the filtered water, granulated sugar, and acid blend. Stir until the sugar is fully dissolved.

Combine Ingredients

Crush the Campden tablets and add them to the mixture. This will help to kill any wild yeast and bacteria present in the juice. Allow the mixture to sit for 24 hours covered with a cloth.

After 24 hours, sprinkle the champagne yeast over the mixture. Stir gently to incorporate the yeast, then cover the fermentation vessel with an airlock.

Pitch the Yeast

Allow the cider to ferment at a cool temperature (60-70°F / 15-21°C) for 1-2 weeks. During this time, bubbles will form in the airlock, indicating fermentation is taking place.

Primary Fermentation

After primary fermentation, siphon the cider into a clean fermentation vessel, leaving sediment behind. Allow it to ferment for an additional 2-4 weeks to develop flavor.

Secondary Fermentation

Clean and sanitize your bottles and caps. Use a bottle brush and a suitable sanitizer to ensure they are free from contaminants.

Prepare Bottles

Siphon the cider into the prepared bottles, leaving a small amount of headspace at the top. Cap the bottles securely.

Bottle the Cider

Store the bottled cider in a cool, dark place to age for at least 2 months before enjoying. This allows the flavors to mature and develop.
