In a large pot, heat 6 liters of filtered water to approximately 160°F (71°C). Add 5 cups of pale malt and 0.5 cups of caramel malt, stirring well to combine. Maintain the temperature for 60 minutes.

Prepare the Mash

After the mash, rinse the grains with hot water to extract the sugars. Collect the liquid (wort) in a separate pot.

Sparging

Bring the collected wort to a boil. Once boiling, add 1 tsp of bittering hops. Boil for 60 minutes, adding 1 tsp of flavor hops in the last 10 minutes of the boil.

Boil the Wort

After boiling, cool the wort quickly using an immersion chiller or an ice bath until it reaches around 70°F (21°C).

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch (add) the lager yeast and seal the vessel with an airlock. Ferment at 50°F (10°C) for 2 weeks.

Fermentation

After fermentation, add 0.5 cups of fresh lime juice and 2 tsp of lime zest to the beer. Stir gently to incorporate.

Add Lime Flavor

Siphon the beer into sanitized bottles, leaving some space at the top. Cap the bottles and let them carbonate at room temperature for 1 week.

Bottling

After carbonation, refrigerate the bottles. Serve chilled and enjoy your classic lime light beer!
