In a large pot, combine the apple juice, water, and sugar. Stir well until the sugar is fully dissolved.

Combine the Base Ingredients

Place the pot on the stove over medium heat and bring the mixture to a gentle simmer. This should take about 10 minutes.

Heat the Mixture

Once simmering, add the cinnamon sticks to the pot. Allow the mixture to simmer for an additional 5 minutes to infuse the flavor.

Remove the pot from heat and let it cool to room temperature. This is crucial for the fermentation process.

Cool the Mixture

Once the mixture has cooled, remove the cinnamon sticks. Transfer the liquid to a fermentation vessel.

Prepare for Fermentation

Add the lemon juice, vanilla extract, and clove to the fermentation vessel. Stir gently to combine.

Add Flavoring Ingredients

Sprinkle the champagne yeast on top of the mixture. Do not stir. Cover the vessel with a cloth and secure it with a rubber band.

Place the fermentation vessel in a dark, warm area and let it ferment for about 1-2 weeks, checking daily for bubbles.

After fermentation is complete, use a siphon to transfer the cyzer into clean bottles, leaving some space at the top.

Bottle the Cyzer

Seal the bottles with caps. Allow them to carbonate for another week at room temperature.

After a week, refrigerate the bottles. Serve chilled and enjoy your homemade Apple Cyzer!
