Prepare the Ribs

Remove the membrane from the back of the ribs. Pat them dry with paper towels.

Season the Ribs

Rub the ribs with salt, black pepper, garlic powder, onion powder, and paprika. Make sure to cover all surfaces.

Preheat the Grill

Preheat your grill to a low heat (about 225°F or 107°C). If using a charcoal grill, set it up for indirect cooking.

Prepare the Wood Chips

Soak the wood chips in water for at least 30 minutes before using. Drain before placing them on the grill.

Cook the Ribs

Place the ribs on the grill away from direct heat. Add the soaked wood chips to the grill for smoke flavor. Cook the ribs for about 3 hours, maintaining a consistent temperature.

Baste with BBQ Sauce

During the last 30 minutes of cooking, baste the ribs with Darryl's BBQ sauce every 10 minutes.

Rest and Serve

Remove the ribs from the grill and let them rest for 10 minutes before slicing. Serve with additional BBQ sauce if desired.
