Pita & Condiments

    Prep sauces

    In separate small bowls: leave mayonnaise plain for the Grilled Chicken and Veggie pitas; reserve 1/2 cup BBQ sauce for the BBQ chicken pita and mix the reserved 1/2 cup BBQ sauce with brown sugar and Worcestershire for glazing; set aside 1/2 cup Caesar dressing for the Chicken Caesar.

    Warm pitas

    Wrap the 6 pita pockets in foil and warm in a 350°F (175°C) oven for 5–8 minutes or heat 30 seconds per side in a dry skillet until pliable. Keep wrapped to stay warm.

Grilled Chicken

    Tenderize & season

    If chicken breasts are thick, butterfly or pound to even thickness (~1/2" thick). Rub with 1 tablespoon olive oil, garlic powder, smoked paprika, dried oregano, 1/2 teaspoon salt and 1/4 teaspoon black pepper.

    Grill or pan-sear

    Heat a grill or heavy skillet to medium-high. Cook chicken 4–6 minutes per side (depending on thickness) until internal temperature reads 165°F (74°C). Let rest 5 minutes, then slice thinly for pitas.

BBQ Chicken

    Season thighs

    Pat chicken thighs dry and season lightly with salt and pepper.

    Cook & glaze

    Heat a skillet or grill over medium-high heat. Cook thighs 5–7 minutes per side until nearly cooked through. In the last 3–4 minutes, brush with the 1/2 cup BBQ sauce mixed with brown sugar and Worcestershire, turning and glazing until sauce is sticky and chicken reaches 165°F (74°C). Remove and let rest 5 minutes; slice or shred.

Chicken Caesar

    Assemble Caesar filling

    Toss chopped Romaine, 1/2 cup grated Parmesan, croutons and the reserved 1/2 cup Caesar dressing until evenly coated. Add sliced grilled chicken and toss lightly to combine.

Veggie Abrigo

    Prepare vegetables

    Preheat a grill pan or grill to medium-high. Brush eggplant, zucchini, red pepper and red onion with 2 tablespoons olive oil and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

    Grill veggies

    Grill vegetables 3–5 minutes per side until tender and lightly charred. Let cool slightly, then slice into strips if needed.

    Finish veg filling

    Toss grilled vegetables with torn basil, crumbled feta and 2 tablespoons balsamic glaze. Adjust seasoning to taste.

Veggies & Fillings (assemble all pitas)

    Pita Club (general build)

    For each pita, open pocket carefully. Spread desired sauce inside (mayonnaise for Grilled Chicken & Veggie, BBQ for BBQ Chicken, Caesar dressing for Chicken Caesar). Layer mixed greens, tomato slices, cucumber slices and thinly sliced red onion as a base.

    Grilled Chicken Pita

    Fill two warmed pitas with the seasoned sliced grilled chicken (about 2 breasts worth total across two pitas), a smear of mayonnaise, mixed greens, tomato and cucumber. Close and serve.

    BBQ Chicken Pita

    Fill two warmed pitas with sliced or shredded BBQ chicken (from BBQ Chicken section), a sprinkle of shredded cheddar, mixed greens and a drizzle of extra BBQ sauce if desired. Close and serve.

    Chicken Caesar Pita

    Fill one or two pitas (depending on portioning) with the Chicken Caesar mixture prepared earlier. Add extra grated Parmesan on top if desired. Close and serve.

    Veggie Abrigo Pita

    Fill remaining pita(s) with the Veggie Abrigo mixture: grilled vegetable strips tossed with basil, feta and balsamic glaze, plus a handful of mixed greens. Add a light spread of mayonnaise if you want extra richness. Close and serve.

    Serve

    Cut pitas in half if desired. Serve immediately while warm. Optionally offer additional condiments (extra BBQ sauce, Caesar dressing, hot sauce) on the side.
