For the Burger Patties

Form patties
Place ground beef in a large bowl. Add salt, pepper and Worcestershire sauce. Gently combine with your hands or a spoon until just incorporated; do not overwork. Divide into 6 equal portions (about 225 g / 8 oz each) and form into patties slightly wider than your buns, about 3/4 to 1 inch thick. Make a shallow dimple in the center of each patty with your thumb to prevent puffing while cooking.

Cook patties
Heat a heavy skillet or griddle over medium-high heat and add vegetable oil. When shimmering, add patties (do not overcrowd; work in batches if needed). Cook undisturbed for 3-4 minutes until a brown crust forms. Flip and top each patty with a slice of cheddar. Cook an additional 3-4 minutes for medium (adjust time for desired doneness). Transfer cooked patties to a warm plate and tent with foil to rest.

Make sauce
While patties cook, combine creamy peanut butter, heavy cream, soy sauce, brown sugar, apple cider vinegar, garlic powder, and hot sauce (if using) in a small saucepan over low heat. Whisk constantly until smooth and glossy, about 3-5 minutes. If the sauce is too thick, whisk in water, 1 tablespoon at a time, until a pourable but still creamy consistency is reached. Taste and adjust: add more soy for saltiness, vinegar for brightness, or brown sugar for sweetness.

Keep warm
Reduce heat to the lowest setting to keep the sauce warm while finishing patties, stirring occasionally so it does not separate. If it thickens too much, stir in a tablespoon of cream or water.

Spread peanut butter
Spread about 1 tablespoon of the additional creamy peanut butter on the bottom half of each bun and a light drizzle (about 1 tablespoon) of the warm peanut butter sauce on the top half. The additional peanut butter gives texture and a more pronounced flavor; the warm sauce adds silkiness.

Assemble burgers
Place a lettuce leaf on the bottom bun over the peanut butter spread (optional to keep bun from getting soggy). Set a cheddar-topped patty on the lettuce. Add two strips of bacon folded to fit, 2 pickle slices, and some thinly sliced red onion. Spoon 1-2 tablespoons of the warm peanut butter sauce over the patty. Cap with the top bun and press lightly.

Finish and garnish
If desired, sprinkle chopped roasted peanuts and chopped parsley over the exposed sauce for crunch and color. Serve immediately with fries or a simple side salad.
