Preparing the Oysters
Shucking the Oysters
Carefully shuck the fresh oysters using an oyster knife. Hold the oyster with a towel to protect your hand. Insert the knife into the hinge of the oyster and twist to open. Slide the knife along the shell to cut the muscle that holds the oyster in place. Remove the top shell and set aside.
Cleaning the Oysters
Once shucked, gently clean any debris from the oyster with a small brush or cloth, ensuring they are ready to serve fresh.
Preparing the Lime & Ginger Granita
Adding Lime and Ginger
Add the fresh lime juice, grated ginger, and lime zest to the sugar-water mixture. Stir well to combine.
Freezing the Granita
Pour the mixture into a shallow dish and place it in the freezer. Every 30 minutes, use a fork to scrape the mixture, breaking up any ice crystals until fluffy, about 2-3 hours.
Serving
Plating the Oysters
Arrange the freshly shucked oysters on a serving platter. You may add ice to keep them cold.
Serving the Granita
Scoop the lime and ginger granita into small serving cups or bowls. Serve alongside the oysters for a refreshing accompaniment.
